When we began thinking about our wine, we selected all the characteristics that according to us it ought to have. In our head we called “00″. A wine theoretically conceived as “the best possible”. Having taken all the appropriate decisions, when we arrived at the bottling of the first harvest we decided to name it with a consecutive number corresponding to the year: 01, 02,.., 04.. This also underscores the fact that every year is different, unless you resort to specific treatments to ensure that the product characteristics are the same, which we have no intention of doing.
